Low-Maintenance Recipes Perfect for Outdoor Party

Grilled Tomato and Basil Pizzas
Ingredients
- 1 lb. frozen bread dough
- 2 tbsp olive oil
- 4 medium tomatoes
- 4 ox fresh mozzarella cheese
- 1 c shredded Fontina cheese
- ½ tsp salt
- ½ tsp ground black pepper
- 1 c loosely packed fresh basil leaves
Directions
Cut thawed bread dough into four pieces. On oiled cookie sheet, spread and flatten one piece of dough about 1/8-in thick. Lightly brush with olive oil. Repeat for remaining pieces of dough. Cover and refrigerate until ready to use.
Placed one piece of dough, oil side down, on grill over medium-low heat. Grill two to three minutes or until grill marks appear and dough stiffens. Brush tops with olive oil. Turn crust over and quickly arrange ¼ tomatoes and ¼ cheese on crust.
Cook pizza four to six minutes longer or until cheese melts and underside is even browned and cooked through. Transfer pizza to cutting board and sprinkle with 1/8 tsp of salt and 1/8 tsp of pepper, and garnish with fresh basil leaves. Drizzle with olive oil, if you’d like.
Repeat with remaining ingredients.

Spaghetti Carbonara
Ingredients
- 1 lb spaghetti
- 8 oz bacon
- coarse salt
- freshly ground pepper
- 3 large eggs
- ¾ c grated parmesan cheese
- ½ c half and half
Directions
Set a large pot of water to boil for pasta. In large skillet, cook bacon over medium heat, stirring occasionally, until crisp. About 8 to 12 minutes. Transfer to a plated lined with paper towel.
Salt boiling water generously; add pasta and cook until al dente, according to package instructions.
In large bowl, whisk together eggs, parmesan cheese and half and half. Set aside.
Drain pasta, leaving some water clinging to it. Working quickly, add hot pasta to egg mixture. Add bacon; season with salt and pepper. Toss all to combine (heat from pasta will cook eggs). Sprinkle with additional parmesan cheese. Serve immediately.
